children's banana cake

A nice recipe as it doesn't contain any additional sweeteners and can easily be made dairy-free too.

Ingredients:
dried plums  -  150 g
eggs  -  3
yoghurt (full-fat)  -  100 ml
(wholemeal) flour  -  250 g (sifted)
cinnamon  -  1 tsp
ground ginger  -  0.25 tsp
grated coconut  -  50 g
bananas  -  3
lemon juice  -  of 1 lemon
a bit of butter or vegetable oil

Preparation:
Soak plums for a few hours, boil for 10 mins, leak and cut into small pieces;
Separate egg yolks from whites & whisk yolks with yoghurt;
Add yolks & yoghurt to flour & spices;
Add in coconut and plum pieces;
Mash bananas with a fork and add to the mixture;
Beat egg whites & fold into the mixture.
In greased cake tin bake for 1 hour at 180C.

carrot cake

googled up 5 recipes and combined, with success:

Ingredients:
eggs  -  4
vegetable oil  -  250 ml
sugar  -  200 g
flour  -  around 250 g ("2 cups")
soda  -  2 tsp
baking powder  -  2 tsp
salt  -  0.5 tsp
cinnamon  -  2 tsp
grated carrots  -  250 g
chopped nuts  -  150-200 g (pecans or walnuts, hazelnuts will also do)

icing:
lemon zest  -  0.5
cream cheese  -  250 g
butter  -  125 g (not sure anymore how much I used...)
icing sugar  -  about 1/10 of what other recipes indicate; I think I used about 40 g (this gave a much less sweet icing than you would usually find, but was exactly to my taste and that of my guests)

Mix eggs, oil, sugar in a bowl;
Add in: flour, soda, baking powder, salt, cinnamon (and other spices if adding);
Fold in carrots and nuts.
Bake for about 45 mins. (or until a pen inserted in the cake comes out dry).
